Ingredients:
- 500g lamb or mutton, cut into pieces
- 2 onions, finely sliced
- 2 tomatoes, chopped
- 1/2 cup yogurt
- 1/4 cup mustard oil
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 4-5 green cardamom pods
- 2-3 cloves
- 1-inch cinnamon stick
- 1 bay leaf
- 1 tsp ginger-garlic paste
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp ground dry ginger
- 1 tsp garam masala
- Salt to taste
- Chopped coriander for garnish
Instructions:
- Heat mustard oil in a heavy-bottomed pan.
- Add cumin seeds, fennel seeds, green cardamom, cloves, cinnamon, and bay leaf. Sauté until aromatic.
- Add sliced onions and cook until golden brown.
- Add ginger-garlic paste, chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the oil separates.
- Add yogurt and stir well. Cook for a few more minutes.
- Add the meat and brown it on all sides.
- Add ground dry ginger and garam masala. Mix well.
- Add enough water to cover the meat. Cover and simmer until the meat is tender.
- Garnish with chopped coriander and serve hot with rice or naan.
